It’s finally cherry season again! And this morning we decided to make some Vegan Cherry Ice Cream. It’s the first time we made this, but I wonder why we haven’t before! It’s insanely good! I’m serious!!
Cherries are one of my favorite fruits to eat! I remember living in Stuttgart Germany where lots of people have cherry trees. During the season, Paul and I would go around and ask if we could harvest their cherries – most people just have the trees for decoration or are too old to go out and plug the fruits themselves. We ended up having a huge supply of cherries every year – without even spending a dime 🙂 … we also got to bless several people by getting cherries for them from their trees :).
Cherries are one of the things we will definitely miss when living in and traveling through the Tropics. Another benefit from eating cherries is, that you get the cherry seeds! PLEASE don’t toss those out, they make excellent cherry seed pillows! Follow this link to see how to make yours.
Three Ingredient Vegan Cherry Ice Cream
It’s almost unbelievable, but three simple ingredients can make an insanely good, toe tickling, craving calming, smile creating ice cream.
What you need
6-8 frozen ripe bananas
1 lb cherries (washed and de-seeded)
1/4 can full-fat coconut cream/ milk
- Cut your frozen bananas into small pieces.
- Add all ingredients to your high-speed blender. Vitamix is best, but other blenders work as well.
- Enjoy right away or add to an ice cream maker to get more firm.
This totally reminds me of some creamy cherry yogurt I used to eat when growing up in Germany. It’s so creamy, sweet and fruity and just so satisfying! Our breakfast the coming couple of weeks :). How do you like this? Comment below, we’d love to hear from you!
